Summer Breeze Salad

Introduction:

July has brought on some heat that only us southerners could endure. To combat this heat, we here at SchnellerCo, have decided to bring a recipe to the blog for the very first time-- the Summer Breeze Salad! This is my very first blog post with the company, and I am so excited to share this salad with all y’all! With this new recipe, you’ll cook for the whole family something healthy, easy to make, fresh, and delicious! 

Backstory:

I spent this past year trying to eat healthily at college, so for lunch every day, I would have a salad from the salad bar. Now, honestly, I have never been much of a salad guy, so creating the perfect salad seemed a daunting task. Still, after months of trial-and-error, the Summer Breeze Salad was created! Now, in the heat of July, this salad has finally been perfected, and just in time to beat the heat. I recommend pairing this salad with a trip to the beach, a margarita, and a good book.

Ingredients: Serves 4

  • 8 cups spinach

  • 1 cup craisins (cranberry raisins)

  • 4 mandarin oranges

  • 2 lbs. chicken breast

  • 4 tablespoons olive oil

  • Garlic salt to taste

  • 1 cup flour

  • 1 cup breadcrumbs

  • 1 ½ cups cashews

Raspberry vinaigrette to taste

Ingredients: Serves 1

  • 2 cups spinach

  • ¼ cup craisins (cranberry raisins)

  • 1 mandarin orange

  • ½ a cup chicken breast

  • 1 tablespoon olive oil

  • Salt, pepper, and garlic powder to taste

  • ½ cup flour

  • ½ cup breadcrumbs

  • ½ cups cashews

  • Raspberry vinaigrette to taste

Directions

  1. Wash spinach, peel mandarins and prepare craisins. Place the flour, salt, pepper, garlic powder, and breadcrumbs in a bowl. Mix the bowl thoroughly.

  2. Place raw chicken strips in a bowl until they are coated all around. Warm your pan, and cook the chicken strips in it on medium heat with olive oil.

  3. Once your chicken is cooked all the way through, grab your favorite SchnellerCo. Board and cut the chicken into chunks. 

  4. Mix spinach, craisins, mandarin pieces, chicken chunks, cashews, and raspberry vinaigrette in a large bowl. Serve and enjoy!
