Introduction

Welcome back to another installment of SchnellerCo Recipes with Ricardo! With August's arrival, I have seen a lot of bees buzzing about my yard these past few days. They inspired me to make a honey-themed dish this week, which you'll find instructions on how to make below. Honey boasts a million health benefits and doesn't expire, so dust off that jar sitting in your cupboard, it's time to cook!

Health Benefits

What You’ll Need:

  • One large-sized pan for chicken and broccoli

  • One large-sized pot for potatoes

  • SchnellerCo cutting board

Ingredients-- Serves 6

  • Honey (to taste, but we used about 5 oz)

  • 3 lbs of chicken breast

  • 1 tbsp smoked (or regular) paprika

  • 1 dash of oregano (to taste)

  • 1 tbsp lime juice

  • 1 loaded tbsp of garlic

  • 1 box of mashed potatoes

  • Milk

  • Water

  • Butter

  • 1 medium bunch of broccoli (3½ cups)

  • Olive oil

  • Salt

  • Pepper

  1. Slice your chicken breasts in half if they are very thick. In a bag, place the chicken, paprika, lime juice, garlic, oregano, and salt to taste. Mix in the contents of the bag and (ideally) leave them to marinate overnight. If you cannot, leave them to marinate while you make the mashed potatoes.

  2. Make the mashed potatoes in a large pot. We wanted to keep this recipe friendly and as easy as possible, so we made them from a box instead of from real potatoes. Follow the instructions on the box. You'll likely need water, butter, and milk. Then set aside.

  3. Now, heat a large pan and add olive oil. Cook chicken until it's golden brown-- about 5 minutes on medium-high heat per breast. Set aside cooked chicken.

  4. Chop broccoli into bite-sized pieces and add salt, pepper, and olive oil to taste (it's better to have too much olive oil than not enough). In the same pan, you cooked the chicken in, toss the chopped broccoli in and cook them for about two minutes on medium-high heat. Make sure to stir frequently to avoid burning it.

  5. Once you've finished, serve the potatoes, chicken, and broccoli on a plate. Finally, add a drizzle of honey over the whole dish-- and be generous!
