Welcome back to Recipes with Ricardo! If you're new, take a seat, put on your most comfy clothes, and open up your pantry— it's time to cook! If you're a returning member of the SchnellerCo family, thank you for coming back, today's recipes are going to be extraordinary.

Now, you're probably thinking, "Three recipes in one blog post? Shouldn't he just post them for three weeks in a row like he did with the Strawberry Banana Series?" And sure, that's the easy thing to do, but I want to spoil y'all this weekend.

Without further ado, let's get baking.

Tips:

On bananas: The riper the banana, the better! If you have really green bananas, try putting them in an open paper bag on top of your refrigerator (or on any heat source) overnight. If you still feel like they could be riper, peel them, and pop them in the oven for 10 minutes on 350. When you mash your bananas, some like large chunks and some don't— it's up to you.

On sugar: Brown sugar is best for the Strawberry-Banana Bread. For Nutella Banana Bread and for Berry Berry Berry Best Banana Bread, white sugar keeps the consistency of the bread and doesn't make it too moist. The Berry Berry Berry Best Banana Bread needs longer in the oven, and the brown sugar would just add to the time it needs to bake.

On baking: Stick a toothpick in the bread to check how done it is. If it comes out clean, the bake is done. If it comes out with runny batter or clumps, give it another 3-5 minutes in the oven.

Nutella Banana Bread Recipe

Ingredients: Makes 1 loaf

  • 8 tbsp. (1 stick) unsalted butter

  • 1 cup white sugar

  • 2 large eggs

  • 1/3 cups of milk

  • 1 tsp vanilla extract

  • 3 medium overripe bananas

  • 2 cups flour

  • 1 tsp baking soda

  • 1 tsp salt

  • ¾ cups Nutella

Directions:

  1. Melt your butter and mix with sugar in a large bowl.

  2. Use the wrapper from your stick of butter to grease your pan.

  3. Add the eggs, milk, and vanilla extract, mixing after each one.

  4. Mash your bananas (as chunky as you like them) and add them to the bowl.

  5. Add flour, baking soda, and salt. Mix until viscous liquid, then pour into your pan.

  6. Take dollops of Nutella and place them all over your mixture. With a large toothpick, move around the Nutella throughout your mixture, making whatever pattern your heart desires.

  7. Bake for 45 minutes at 350 degrees. If still not done, continue baking at 3-5 minute intervals, checking often.

  8. Serve and enjoy!

Berry Berry Berry Best Banana Bread Recipe

Ingredients: Makes 1 loaf

8 tbsp. (1 stick) unsalted butter

1 cup white sugar

2 large eggs

1/3 cups of milk

1 tsp vanilla extract

3 medium overripe bananas

2 cups flour

1 tsp baking soda

1 tsp salt

¾ cups chopped raspberries

¾ cups chopped blueberries

¾ cups chopped blackberries

1 4oz mixed berry yogurt

Directions:

  1. Melt your butter and mix with sugar in a large bowl.

  2. Use the wrapper from your stick of butter to grease your pan.

  3. Add the eggs, milk, and vanilla extract, mixing after each one.

  4. Mash your bananas (as chunky as you like them) and add them to the bowl.

  5. Add flour, baking soda, and salt.

  6. Chop your blueberries in half. Chop your raspberries and blackberries into small bite-size pieces, so they don't fall through the bread mix. Pour into the mixture, leaving some berries on top for aesthetic.

  7. Bake for 55 minutes at 350 degrees. If still not done, continue baking at 3-5 minute intervals, checking often.

  8. Serve and enjoy!
